Healthy sandwiches – what to prepare for breakfast?

We spend the vast majority of our day at work or school, so it is important to make sure we eat regular and healthy meals. During the 8 hours we should eat a second breakfast and lunch so that we do not lose energy during our duties. What is worth taking with you? What sandwiches are tasty and rich in nutritional value?

White bean and apple lard

Recently, vegetarian vegetable pastes are becoming more and more popular. They find their use even among carnivores. To prepare this paste you need: 600 grams of white beans, onion, apple, 8 pieces of dried plums, bay leaf, 2 cloves of garlic, olive oil, herbs

First, soak the white beans overnight in cold water. The next day pour fresh water over them, add allspice and bay leaf. Add salt and cook until soft. Dice the onion, apple and prunes, chop the garlic and lovage finely. Fry the onion in hot oil until brown, add the apple, garlic and plum. Let it cool down and then put the beans into the blender and grind. Put the blended mixture into a bowl, add olive oil and mix with fried ingredients. Season with herbs to taste. Finished lard is best served with pickled cucumber.

Fish paste sandwiches with egg and pickled cucumber

To prepare the paste you need: 3 tbsp mayonnaise, 200 g smoked mackerel, 2 eggs, cucumber – preferably canned, sunflower seeds, chives, hot bell pepper, half a lemon

To prepare the paste, start with hard boiling eggs. While the eggs are cooking, dice or grate the cucumber and chop the chives. You can roast sunflower seeds in a frying pan or leave them as they are in the packet. They taste great in both versions. Remove the skin and bones from the mackerel, put it into a bowl and mash into a paste. Then add mayonnaise, squeeze some juice from half a lemon, add boiled and peeled eggs, the remaining vegetables and mix thoroughly. Season the paste to taste and put it on sandwiches!

Wrap with egg paste, chicken and corn

A slightly different form of sandwich that will add variety to your breakfast. To prepare a wrap you need: garlic sauce, a tortilla chip, ketchup, 50g of smoked chicken, a hard boiled egg, and canned corn. To prepare the tortilla, toast it in a dry frying pan. In the meantime cut the chicken into small pieces, mash the boiled egg with a fork and combine with the sauce and ketchup. Then add drained corn, chicken and season to taste. Spread the ready paste on tortilla slices, and roll them tightly.

Sandwich with hummus and vegetables

Ingredients: Grain roll, 100 g of canned chickpeas, half a clove of garlic, 1 teaspoon of tahini sesame paste, 1-2 tablespoons of lemon juice, herbs, pickled cucumber, a quarter of a red bell pepper, a handful of arugula

To make hummus, place canned chickpeas, garlic, and tahini paste in a blender, add lemon juice, a pinch of salt, and your favorite herbs. Blend to a smooth hummus. You can add a teaspoon of water for a smoother consistency. Slice the roll and spread hummus on its bottom half. Cut cucumber into slices and bell pepper into strips. Place the vegetables on the sandwiches and cover with the top of the bun.
